Whole-grain baking in Magdalena

Do Magdalena (and area) residents need a whole-grain bakery? And would one be able to do enough business to thrive here? Sunseed sour rye

I started (February 2015) a bakery in the area, working in the Socorro Community Kitchen and selling in the Socorro Farmer's Market. Usually a couple of local women were willing to sell for me. The business never broke even (I figured that I'd need to sell 25 loaves weekly just to pay the ingredient costs, food prep permit, other fees, and sales labor, and rarely sold that many) and I closed it in September 2016.

Perhaps a storefront or cafe bakery in Socorro would thrive, but I think it would need to make pastries and white breads too.
